The age old process of fuming Oak results in the natural tanins in the Oak turning a deep brown colour. A deeper brown colour is achieved when the Oak is fumed for three months. The tanins are not equally spread throughout the structure of the tree so the heart and sappy exterior do not turn as dark as the middle core of the tree.
